Well, this is a subject worth giving some insight. When I visited Amsterdam and looking for a place to stay the first thing I noticed was the price. Accommodations aren't cheap at all, at least compared to let's say Spain, for example. So this is something you have to keep in mind.
Another thing I noticed was the quality of the hotels could not be assumed by the amount of stars the hotel has, in Amsterdam I think the stars are more about services than quality, so you could find a 2 star hotel nicer than a 5 star hotel.
My recommendation here is to search for the hotel online and get to see the pictures of the rooms before, so you don't get any surprises.
And of course, hotels are more expensive downtown than in the outskirts. My piece of advice is to do as I did.
Rent a car from Amsterdam Schipol Airport and stay in the outskirts of the city, hotels are cheaper and I got to drive around and take a closer look to places.
